Time and familiarity can render memories of first eating a dish non-existent, but there are those which you remember keenly. A moment of culinary love at first bite. Pissaladière is the latter moment for me, and speaks not of its Provençal homeland but to the now departed Swallow Bar in Maylands, Perth.
